Product origin and processing
Italian olive oil obtained from selected olives grown in the countryside of Ruvo di Puglia and neighboring municipalities, certified by the Certification and Inspection Body Sidel S.p.A.
The olive variety used is Coratina, harvested at the optimal stage of ripeness by the end of December.
Appearance and organoleptic profile
COLOR: olive green with yellow hues.
AROMA: fruity notes of green olives, enriched with herbal scents, hints of artichoke, and almond notes.
FLAVOR: harmonious, well-balanced, and fruity taste, with light bitter and spicy notes.
Clean fruity olive aftertaste, almondy with herbal nuances.
Processing method
Extraction is carried out cold, with temperatures kept below 27°C, preserving all the organoleptic, chemical, and physical properties of the oil and preventing oxidation.

Pairings
Can be used to enhance dishes with medium to strong flavors without altering their taste.
When used raw, it enriches legumes, white meats, carpaccio, bresaola, salads, vegetables, and bruschetta.
When cooked, it is ideal for sauces and ragù, roasted or grilled meats, and gives desserts a unique flavor and excellent digestibility.
Best before date
Preferably consume within 18 months from the packaging date.
