Product origin and processing

Italian olive oil obtained from selected olives grown in the countryside of Ruvo di Puglia and neighboring municipalities.

The olive variety used is Coratina, harvested between October and December.


Appearance and organoleptic profile

COLOR: olive green with golden yellow hues.
AROMA: fruity notes of green olives, enriched with herbal scents and hints of artichoke and almond.
FLAVOR: intense, harmonious, and well-balanced, with light bitter and spicy notes.

Clean fruity olive aftertaste, almondy with herbal nuances.


Processing method

Extraction is performed cold, with temperatures kept below 27°C, preserving all the organoleptic, chemical, and physical properties of the oil and preventing oxidation.


Pairings

Can be used to enhance dishes with medium to strong flavors without altering their taste.

When used raw, it enriches white meats, carpaccio, bresaola, salads, and vegetables.
When cooked, it is ideal for preparing sauces and ragù, roasted or grilled meats, and gives desserts a unique flavor and easy digestibility.


Best before date

Preferably consume within 18 months from the packaging date.
